This year, we’ve been pouring more than just your usual beers. So, what’s been brewing?

The Art Of Brewing: How Our Beers Come To Life
When Ian, owner of Brown Bag Burger + Bar Flagstaff and Brown Bag Burger + Bar Prescott, had the idea of having his own beers, it wasn’t just a wild idea – it was his mission. He wanted the taps to tell our story.
After some epic brew days, a few late-night experiments, and a lot of taste testing (someone obviously had to do it), two new brews were imagined and brewed. Why these? One’s cozy, the other’s bold; but both scream Brown Bag energy!

The Oatmeal Stout: A Hug in a Glass
Creamy, smooth, and cozy, this oatmeal stout offers roasted malt, chocolate, and subtle sweetness with a velvety, comforting finish.

The Doppelbach: Malty, Bold, and Ready to Impress

This Northern Arizona brew is an ode to old-school German brewing talent – and we hope it lives up to the hype. Fermented low and slow to build bold, layered flavor, the Doppelbach isn’t a beer you chug. It’s a beer you savor!

These fries are bold, garlicky, and flavorful – just like the Doppelbach. The parmesan brings the salt and umami that tie it all together. With just the right hit of herbs and punch, they’re basically the Doppelbach’s best friends.
The Hawaiian Burger (available at both Flagstaff and Prescott restaurants)
From the islands to the biergarten in one bite. The sweetness from the grilled pineapple and our homemade onion jam cut right through the Doppelbach’s bold malt profile, balancing everything out with a little tropical twist. Bold? Yep. Good? Absolutely!

Fun Facts & Brewery’s Secrets
These brews aren’t just another addition to the tap list – they’ve been in the works for a while. The Oatmeal Stout is brewed with oats for that smooth, creamy finish, while the Doppelbach spent several weeks lagering at low temperatures to build depth and balance. Yeah, it takes time, but it’s worth it!
If you’re into the details: the stout uses a specific yeast strain that gives it extra roundness and body, while the Doppelbach is built on a rich malt base with just a touch of hops to keep things balanced.
Both have been quietly fermenting since January and are finally ready to be sipped at both Brown Bag Burger + Bar in Flagstaff and Brown Bag Burger + Bar in Prescott.
And here’s the scoop: these beers have always been brewed right at the same Prescott location – yep, the same tanks, same team, same love.
The only thing that’s changed for April 2025? The name. The brewery is now Malt House Brewing, our main partner bringing that same local craft to both Brown Bag Burger + Bar Flagstaff and Prescott.
Same bold flavors. Same local quality. Just with a fresh identity – and way more room to shine.

When & Where to Grab a Pint
Ready to dive into our newest local brews here in Northern Arizona? Starting this April, both beers will be on tap at Brown Bag Burger + Bar Flagstaff and the newly renamed Brown Bag Burger + Bar Prescott – formerly Brown Bag Brewery.
And the brewery now has its own identity, the Malt House Brewing, the local brewery is still going strong and is Brown Bag Burger’s main partner for local, bold brews.
